Seven honey sponges, sour cream frosting

Seven thin honey sponges, each rolled out and baked one at a time, then stacked with a light sour cream frosting.
The cake rests overnight so the layers soften into each other, and the outside gets a coat of toasted honey crumbs. Soft, gently sweet, and even better on the second day.

Double Chocolate BiBi Cake
Chocolate sponge, chocolate cream, chocolate crumb

Our darkest cake, made for serious chocolate lovers. Moist chocolate sponge layered with silky chocolate cream, covered all over in chocolate crumb and finished with piped chocolate rosettes.
Deep and rich without being heavy. Serve it at room temperature for the softest crumb.

Napoleon Puff Pastry
Crisp puff pastry, vanilla custard cream

Many layers of buttery puff pastry, baked until crisp and golden, then filled with smooth vanilla custard cream.

Persian Style Danish Pastries
Soft rolled pastry with toasted sesame

A Persian bakery classic. Soft, buttery yeast dough rolled into a spiral, brushed until glossy and covered in sesame seeds.
Lightly sweet, with a tender crumb that pulls apart in layers. Lovely with a glass of tea.
